oven roasted beets

A nice side dish to go with early season corn on the cob.

Ingredients

  • beets
  • oil
  • salt & pepper
Cooking Instructions
Pre-heat oven to 375F. Trim off greens leaving 1" to 2" of tops on the beets. Wash, dry, and trim off root end. Rub with oil. Place on baking sheet. Bake for 45 minutes. Slice. Salt & pepper to taste.
Notes
Roast some fresh corn on the cob at the same time on the same baking sheet. Sliced beets and sweet roasted corn on the cob go great together.
