Dry cured bacon at Costco

I made the monthly pilgrimage to Costco yesterday and was surprised to find that they are now carrying Fletcher's Dry Cured Bacon! For those of you that don't know, dry curing is the way that bacon is supposed to be made. If you look at a package of bacon in the supermarket, the second ingredient, after "pork", is "water". The only reason for processors to add water is because it is easier and cheaper for them. Who wants watered down bacon?

The Fletcher's product isn't as good as what you would get from a local butcher or hog farmer that makes his own, but it sure beats what passes for bacon in most supermarkets. This 4 pound pack of bacon is going to be my backup supply for those dishes that call for bacon, but don't need the expensive stuff from the butcher.

While there I noticed that they are carrying Casper's Hotdogs again. Casper's is a local Bay Area hotdog chain that had a shop just down the street from where I grew up. I'm not going to try and convince anyone that Casper's hotdogs are the greatest in the world, I'll let Chicago and New York argue over that, but to me Casper's is what a hotdog is supposed to taste like. Since I don't live near a Casper's anymore, this was a nice surprise. I'll probably eat myself sick on them for the rest of the week before putting the rest in the freezer.

I also picked up another box of the Tortilla Crusted Tilapia with Chipotle and Lime that we decided to try the last time we were there. We originally picked it up as emergency supplies for when one of us comes home late, but it is so tasty that it has worked it's way into our regular dinners. In fact, I think I'll have some for lunch.
