My kitchen is gone and I am only two weeks into the remodel. I can not take it any more! I have to bake something! All I have to bake in tonight is a toaster oven so a single, small, loaf of white bread is on the way.

Ingredients

  • 1/2 c. warm water
  • 3/4 t. granualted yeast
  • 2 c. flour (reserve some for dusting)
  • 1/2 t. kosher salt
  • olive oil
Cooking Instructions
Place your flour on a flat surface and make a well in the middle. Carefully pour in the water into the well. Sprinkle the granulated yeast onto the water and wait for it to bloom. 5 to 10 minutes will do.

Slowly work in flour from the sides of the well until the loose water is absorbed. Dough will be very sticky. Knead in the rest of the loose flour. Add dusting flour as needed to keep the dough from sticking to your hands or the work surface.

Knead for at least 10 more minutes. (15 will get you a better loaf.) Cover with a towel and let rest until double in bulk - about 1 hour in a warm room.

No need to punch the dough down. Just press it flat and sprinkle on the salt. Fold and flatten the dough a couple more times to distribute the salt. Shape into a loaf and cover with the towel until the loaf is about 1.5 times larger.

Turn on the oven to 375F pre-heat the oven and the baking sheet. Gently rub a little bit of oil over the outside of the loaf and slice down the middle with the razor blade. Place the loaf onto the baking sheet and bake for 25 to 30 minutes. Cool upside down or on a wire rack.

I would normally bake at 425F to 450F in a larger oven bit I did not want to burn the top or bottom of my little loaf with the nearby heating elements in the toaster oven.
