I do not always have a lot of time after work to prepare dinners since I also teach or run band practice in the evenings. I will usually have two or three main courses that I put together on the weekend and then I will add different side dishes and salads to them during the week.

This green bean side dish was paired with some dry rubbed spare ribs, baked potatoes, and simple green salads.

Ingredients

  • large handful of fresh green beans; washed, stems removed
  • 1/2 red, yellow, or orange bell pepper; sliced, stem, seeds, and ribs removed
  • 1/2 large onion, french cut
  • 2 t. olive oil
  • 1 t. kosher salt
  • 1/2 t. fresh ground black pepper
  • 1/4 t. aleppo chile pepper flakes
  • 2 t. maple syrup
Cooking Instructions
  1. Start heating the pan over medium heat.
  2. Leave the beans whole but remove any attached stems.
  3. Slice the bell pepper length-wise so that the slices are about the same size as the beans.
  4. French cut the onion a bit thicker than the pepper slices.
  5. Add the oil to the hot pan and swirl to coat.
  6. Add the onion and 1 t. of salt to the pan and toss to coat. Let the onion cook until it starts to pick up a bit of colour.
  7. Add the bell pepper slices and the remaining salt and toss to coat. Let this cook for another minute.
  8. Add the green beans, the black pepper, and the aleppo pepper flakes, and toss to coat.
  9. Cook for a few more minutes, tossing occasionally, until the beans are heated through.
  10. Turn the heat down to low and drizzle over the maple syrup.
  11. Toss to coat and let the syrup cook until it starts to carmelize.
  12. Serve & enjoy!
Notes
Be careful not to add too much syrup. You just want a taste of the maple in the dish and not vegetables in maple sauce.
