I like to use this rich and spicy chicken stock as a base for gumbo.

Ingredients

  • whole chicken
  • 3 large onions
  • 4 carrots
  • 3 ribs celery
  • 1 sweet potato
  • saved bones from 3 or 4 chickens
  • 1/2 c. saved mushroom stems
  • 25-ish peppercorns
  • 15-ish cloves
  • 8-ish allspice berries
  • 10-ish Sechuan peppercorns
  • 1 star anise
  • 1 dry guajillo chile
  • 4 bay leaves
  • 2 t. dry thyme leaves
  • 2 slices candied ginger
  • 2 t. light oil
Cooking Instructions
  • Place the stock pot over medium heat.
  • Part up and skin the chicken. Rub chicken pieces with 1 t. of oil and brown in the chicken pieces well in the stock pot. Remove the browned chicken to the medium bowl. Cover and refrigerate.
  • Cut the onions, carrots, celery and sweet potato into large pieces, rub them with the other 1 t. of oil and brown them well in the stock pot. Remove browned vegetables to the large bowl.
  • Stir all of the spices except the bay leaves and ginger into the hot fat in the bottom of the stock pot. Cook the spices until you can smell them.
  • Place all of the chicken bones, vegetables and spices into the stock pot. Fill pot until all of the ingredients are covered with about 3" of water. Cover and bring to a boil.
  • Remove the meat from the chicken bones in the refrigerator and add these bones to the stock pot. Place the meat back into the refrigerator. (This meat is not cooked yet.)
  • Reduce heat until the water is simmering lightly and leave partially covered for 7 hours. (3 for a lighter stock. 7 for a rich and dark stock.) Check every hour and skim off any foam from the surface of the stock.
  • Place the collander into the large bowl and use the slotted spoon to remove all of the vegetables and bones from the stock pot. (Vegetables go into the collander. Bones go into the garbage.)
  • Mash vegetables with the back of the slotted spoon to get out the juices then the vegetables can go into the garbage.
  • Strain all of the stock to get out all of the chicken bone bits and spice berries. The stock can now be cooled and saved for later or placed back on the stove over low heat to be used for gumbo.
Notes
To cool the stock follow any of the quick cooling methods from any of the other stock recipes on this web-site.

To get an even richer and darker stock, rub all of the saved chicken bones with 1 t. of oil and bake them on a baking sheet in a 375F degree oven until the bones brown a bit. Turn the bones once to be sure that all sides have browned evenly.
