I've made variations on this recipe several times in the past, and decided that it would be a good choice to inaugurate my new smoker. On Christmas Eve, with snow all around and the temperatures hovering right at freezing, the thermostatically controlled, insulated smoker did an amazing job. This is a straight forward, simple dry rub recipe that I adapted from the Smoke & Spice cookbook for my slightly spicier tastes. When I make this recipe, I usually make half of it dry, and the other half gets a BBQ sauce mop during the last hour of cooking. Why pick wet or dry when you can have both?

30 minute of work, overnight rub, 5 hours cooking
Tools
  • Smoker
  • Blunt tool like a small screwdriver (well cleaned)
  • Cookie sheet or roasting pan long enough to hold ribs while applying rub
  • Aluminum foil

Ingredients

  • 2 full slabs pork back ribs
  • Apple and/or hickory wood chips for the smoker
  • BBQ sauce for mop (optional if you want wet ribs)

Rub

  • 1 cup packed brown sugar
  • 1/2 cup smoked paprika
  • 3 tablespoons coarsely ground black pepper
  • 3 tablespoons kosher salt
  • 1 tablespoon chipotle powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon Szechuan peppercorns, freshly ground (omit for milder version)
  • 1/2 teaspoon chile tepin or pequin powder (substitute cayenne if you want it milder)
  • 1 1/2 tablespoons garlic powder
  • 1 1/2 tablespoons onion powder
Cooking Instructions
  1. The night before you plan to cook the ribs, make up your rub by mixing all the ingredients together. I put it in a quart mason jar and just shake it up.
  2. Put your ribs on your cookie sheet, silverskin up. Some sources tell you not to remove the silverskin because it isn't that much trouble while you are eating, but I like the rub to have access to all the meat possible. Use the screwdriver to push the silverskin down from a rib tip, then grab it and start pulling. You will probably rip it a couple of times, but I rarely have to pull off more than 3 pieces.
  3. Now is the time to cut it into half-racks if that is the way you need to. My smoker isn't wide enough for a whole rack.
  4. Coat both sides of the ribs with a generous layer of the rub. I use a wet hand/dry hand method, with one hand patting and flipping the meat, and the other spooning or shaking on the rub. This should take no more than half the rub.
  5. Cover the ribs with aluminum foil and put them in the refrigerator overnight.
  6. Take the ribs out of the fridge to warm for about half an hour, and preheat your smoker to about 200-215 degrees F.
  7. If you are cooking dry ribs, sprinkle more rub on the ribs, and rub it in. It isn't as necessary for wet ribs.
  8. Put your ribs in the smoker and add the chips according the the manufacturers instructions.
  9. Cook for about 4-5 hours. For wet ribs, mop BBQ sauce for the last hour.
