Just a quick week-night meal that tastes great. Use extra ginger and chile in the winter to really warm yourself up.

Tools

  • wok or heavy 12" skillet
  • knife & cutting board
  • large mortar & pestle or large bowl & spoon

Ingredients

  • 1/2 lb. lean beef or lamb
  • 1 Tbsp minced garlic
  • 2 Tbsp minced ginger
  • 2 Tbsp minced mint and/or Thai basil leaves
  • 1 tsp whole corriander seeds
  • 1/2 tsp whole cumin seeds
  • 1 tsp fresh ground black pepper
  • 1 tsp hot chile flakes
  • 1/2 tsp kosher salt
  • 2 Tbsp fish sauce
  • 1 Tbsp rice wine
  • 1 Tbsp soy sauce
  • 1 tsp brown sugar
  • 2 Tbsp peanut oil
  • 1 Tbsp minced leek, shallot or onion
  • 1 Tbsp grated carrot
  • 1 Tbsp grated celery
  • 1/4 cup peanuts
  • 1/2 cup frozen peas
  • 1 Tbsp soy sauce

Cooking Instructions

If the meat is not ground, cut into 2" by 1/4" pieces across the grain and place into the mortar & pestle with the garlic, ginger, mint, corriander seeds, cumin seeds, black pepper, chile flakes and salt. Pound the ingredients into the meat until the meat starts to break down.

If the meat is ground, mix the above ingredients well into the meat by hand.

Add the fish sauce, rice wine, soy sauce and brown sugar and mix well. Set aside to marinate while heating the wok over medium and preparing and measuring the rest of the ingredients.

Add the oil to the wok and when it starts to shimmer add the meat (include all spices and juices in the bowl) and spread it out across into one layer. Turn the heat to medium-high. Cook until it starts to brown on the bottom.

Turn the meat over and push it up the sides of the wok. Add the leek, carrot and celery and cook until it starts to soften, then add the peanuts and cook for another minute.

Stir the meat and the frozen peas into the vegetables and add the soy sauce. Turn off the heat and let sit for another minute.

Notes

Serve hot on top of large bed of mixed dark greens, thinly sliced onions, thinly sliced cabbage and grated carrots.
